arugula pesto
recipe adapted from cooks illustrated
ingredients:
1/4 cup raw almonds
4 cloves garlic
1 serrano pepper, seeded
5oz arugula
1oz fresh basil
2 tsp anchovy paste
1 tsp kosher salt
1/4 cup lemon juice
1/4 cup olive oil
1/2 cup grated parmesan cheese
cracked black pepper, to taste
instructions:
preheat the oven to 350. spread almonds on baking sheet, bake for 8 minutes. in food processor, finely chop almonds, garlic, and serrano pepper (mixture should resemble coarse sand). add anchovy paste, arugula, basil, lemon juice, salt, and pepper. process while streaming in olive oil, about 30 seconds. add parmesan and process another 10 seconds. pesto should be smooth. cool in refrigerator for 30 minutes. serve with more salt, black pepper, and parmesan cheese.
